Wood burning stove, slow burn question (throttling back damper)?

newbie here with a question on wood burning stoves, I have one of the new EPA stoves, lennox ca210. Currently, I am very confused on this "slow burn" thing. do I want to slow burn only with wood reduced a pile of embers? i tried slowing down the burn with the logs burning but it will eventually kill the flame, not sure if that is considered "smoldering" ?
